Cheese Please Potato Soup!


It's the right time of the year for soup! Here is a delicious potato soup that is loaded with cheese for extra goodness! Serve in your favorite tureen. Have homemade buttery, garlic croutons on hand. Enjoy!

Cheesy Potato Soup

6-8 medium red Potatoes
Water to cover potatoes
1 green pepper
1 large onion
1/2 package bacon, cut into 1" pieces
1 cup milk
1/3 package Velveeta
(cut into 1" cubes)
1 teaspoon celery seed
Minced garlic (to taste)
Salt and Pepper (to taste)


Peel potatoes and cut them into small pieces.
Place in large pot, cover with water.
Add salt.
Boil (covered) until tender.

While potatoes are boiling, sauté bacon, onion, garlic, and green pepper. Green peppers should be tender and onions clear. Bacon should be almost crisp.

Drain bacon fat,reserving one tablespoon. Add celery seed, salt, and ground pepper and sauté for 1 more minute.

Add sautéd ingredients to undrained boiled potatoes. Turn heat to medium.

Add Velveeta and stir soup until cheese melts. Add milk, and stirring constantly, heat until soup is hot.

Be careful not to burn it.

Ohhh, that tureen is lovely and the soup sonds delicious. I've never thought of adding Velvetta to potato soup before. I will try it.
