Summer- Delightful Recipe!


I have a friend north of Dixie who always laughs when I tell her that we had fried okra for dinner! Well, okra...be it fried, pickled, or boiled....is truly gold from the summer garden. Add a squash casserole, speckled butter beans, hot peppers, onions, and corn bread to the table. There you have my favorite meal of the season. All ingredients must be fresh from the garden though!!! Fried Okra Salad

1 lb. fried okra
1 cup fried bacon crumbled
1/2 cup green onions
1/2 cup green pepper
Zesty Italian dressing
Salt/pepper to taste

Prepare okra by dredging in white corn meal. Fry until crisp. Drain thoroughly.
Add all other ingredients except dressing.
Spritz with Zesty Italian .
Toss!!!

Serve with warm, buttered cornbread.

I will try your recipe! I usually eat okra cooked in tomate sauce!
